AX Hotels is hiring a Junior Sommelier for UnderGrain, its Michelin-starred restaurant in Valletta. The role supports the sommelier team during service and is meant as a step into a wine career.
What you'd do
You would serve wine and other drinks to guests, help recommend wines and pairings, and welcome and host diners alongside the front-of-house team. You assist with daily wine handling and service, keep building your product knowledge, and work with the kitchen so service runs smoothly. Hygiene, service and grooming standards apply throughout.
What you need
Experience in fine dining or luxury restaurant service, and sound knowledge of wines, grape varieties, regions and food pairing. You should be confident talking to guests and recommending wines, reliable under pressure, and organised. WSET or similar wine training is an asset.
